What is Nattokinase?

Sushi is no longer the only 'superfood' coming out of Japan; have you ever heard of Nattokinase? Nattokinase is an enzyme produced by the fermentation of nattō, a traditional Japanese dish made from fermented soybeans. The enzyme is known for its potentially beneficial effects on health.During the production of nattō, the soybeans are first soaked and cooked. They are then mixed with Bacillus subtilis (a soil and gut bacteria) to allow fermentation, during which they are heated at a temperature of 40 C for 24 hours. After fermentation, the nattō is chilled and aged in a refrigerator for up to a week to allow it to develop the desired stringy texture.
